Kandalee Ka Saag: The Nettle Leaf Curry

🥘 Ingredients
- 1 bunch (use tongs to handle!)Tender Nettle Leaves
- 1 tspJakhiya Seeds
- 5 clovesGarlic
- 1 tbspRice Flour
👨🍳 Instructions
Step 1 (Safety): Handle the fresh leaves with tongs or gloves. Boil them in water for 10 minutes. The boiling removes the sting.
Step 2 (Pureeing): Drain the leaves and grind them into a coarse paste.
Step 3 (Tempering): Heat mustard oil, add Jakhiya seeds and crushed garlic.
Step 4 (Cooking): Add the nettle paste and a little rice flour slurry to thicken.
Step 5 (Simmering): Simmer for 15 minutes. Serve hot with Mandua roti.
