Aloo Ke Gutke: Kumaoni Style Spicy Potatoes

🥘 Ingredients
- 500g, boiled and cubedPotatoes
- 2 tbspMustard Oil
- 1 tspJakhiya
- 2-3, wholeDry Red Chilies
- Turmeric, Red chili powder, Coriander powderSpices
- for garnishCoriander Leaves
👨🍳 Instructions
Step 1 (Spice Paste): In a small bowl, mix turmeric, red chili powder, coriander powder, and salt with 2 tbsp of water to make a paste. This prevents the spices from burning.
Step 2 (Tempering): Heat mustard oil until it smokes. Add Jakhiya seeds and whole red chilies. Let them splutter.
Step 3 (Cooking): Add the spice paste and sauté for 1 minute until the oil separates.
Step 4 (Potatoes): Add the boiled potato cubes. Toss gently to coat them with the masala.
Step 5 (Frying): Cook on medium-high heat for 5-7 minutes until the potatoes develop a slight golden crust.
Step 6 (Serving): Garnish with plenty of fresh coriander. Serve with hot tea or as a side with Mandua ki Roti.
