Soak urad dal for 4 hours, then grind into a smooth paste and ferment slightly.

Whisk the batter until light and fluffy.

Mix in salt, green chilies, and curry leaves.

Shape small portions of batter into round discs (vadas) and deep-fry in hot oil.

Fry until golden brown and crispy on the outside.
