- 1/2 cupBamboo Shoots (Baans Kareel)
- 2 tbspTamarind Pulp
- 1/2 tsp eachTurmeric & Chili Powder
- 1/2 tspMustard Seeds
- 1 tbspOil
👨🍳 Instructions

Wash and chop the mixed vegetables and bamboo shoots.

Heat oil in a pan, splutter mustard seeds, then add vegetables and bamboo shoots.

Add water, spices, and salt. Cover and cook until tender.

Traditionally, this was cooked in bamboo pipes for an earthy aroma.

Stir in tamarind pulp and simmer for 5-7 minutes.

Serve hot as a tangy and spicy vegetable curry.
