Chamba Madra: Chickpeas in Creamy Yogurt

🥘 Ingredients
- 1 cup, soaked overnightWhite Chickpeas (Kabuli Chana)
- 2 cups, full fatYogurt
- 3-4 tbspGhee
- 1 tbsp eachRaisins & Cashews
- Cinnamon, Cardamom, ClovesWhole Spices
- Turmeric, Red chili, Cumin powderPowdered Spices
👨🍳 Instructions
Step 1 (Boiling): Pressure cook the chickpeas until soft. Drain and set aside.
Step 2 (Cooking Yogurt): In a heavy pan, heat ghee. Add whole spices and raisins. Add the whisked yogurt and stir continuously on low heat until it boils.
Step 3 (Reduction): Keep stirring and cooking the yogurt until it reduces significantly and the ghee starts floating on top. This takes patience!
Step 4 (Simmering): Add the chickpeas and all the powdered spices. Mix well.
Step 5 (Finishing): Simmer for another 10-15 minutes on low flame until the chickpeas absorb the creamy yogurt flavor. Garnish with fried cashews.
