Patrode: Spicy Colocasia Leaf Rolls

🥘 Ingredients
- 10-12 mediumColocasia (Arbi) Leaves
- 2 cupsBesan (Gram Flour)
- 2 tbsp (essential to prevent itching)Tamarind Paste
- Ajwain, Red chili powder, Turmeric, Garam MasalaSpices
👨🍳 Instructions
Step 1 (Paste): Make a thick batter of besan, tamarind paste, and all spices. The batter should be thick enough to spread.
Step 2 (Layering): Lay a leaf flat, spread the paste. Place another leaf on top, spread paste. Repeat for 4-5 leaves.
Step 3 (Rolling): Fold the sides and roll the stack tightly into a log.
Step 4 (Steaming): Steam the rolls for 20-25 minutes. Let them cool completely.
Step 5 (Frying): Slice the rolls into rounds. Shallow fry on a tawa with a little oil until crispy.
