🥘 Ingredients
- 1 kg agedBasmati Rice
- 1 kgChicken/Mutton
- 2 cupsFried Onions (Birista)
- 2 cupsYogurt
- 1/2 cupSaffron Milk
- 1 bunch eachMint & Coriander
👨🍳 Instructions

Marinate meat with yogurt, ginger-garlic, raw papaya (if mutton), spices, and fried onions for 4+ hours.

Boil water with whole spices and salt (like sea water).

Add soaked rice and cook until 70% done.

Layer the semi-cooked rice over the raw marinated meat in a heavy pot (Kacchi Yakhni style).

Top with saffron milk, ghee, and herbs. Seal with dough.

Cook on high for 10 mins, then low (dum) for 40 mins.
